Last night I had very little time and even less energy for preparing dinner for Kofi and me. Miles’ was easy. I warmed up some squash and added a little baby cereal and goat’s milk, mmmm good. But I always have a bit of trouble getting creative with food for the grown ups of the house. I decided to use up the turkey burgers that my mother in-law bought us over the weekend, but didn’t really know what to do with them that wouldn’t be boring. Here’s what I came up with on the fly.
2-turkey burgers
1-container or leftover brown rice (about 1 1/2 cups)
2-handfuls of organic grape tomatoes
1-cup of water
1/4-teaspoon solid coconut oil
2-handfuls of spicy corn chips
salt, black pepper, chili powder, garlic
I cooked the turkey burgers in a large frying pan with the coconut oil, add spices until they were browned on both sides. Then I chopped the burgers into squares using the edge of the spatula and let the turkey cook the rest of the way through. Next I added the tomatoes and the water and covered the pan for 5 or so minutes. When the tomatoes we soft enough, I smushed them with the spatula to release the juices and added the rice. Then I let it cook for 10 more minutes until all the flava flaves were well blended. Finally I crushed up the corn chips and added the to the top of each bowl.
Kofi said, “Hey, did you just make this up?”. I said, “Yep.”. He said, “Nice.”.
That’s good enough for me.
